Palada Prathaman

Main Ingredients

Ada             200g

Milk            3 Liters

Sugar           750gm

Butter          2 Spoons


Preparation


Soak the Ada in boiling water for 30 minutes. Wash the soaked Ada in cold water 2 to 3 times. Boil 3 liters of Milk. Add washed Ada with milk and allow to boil. Keep stirring till the Ada is cooked and becomes very soft to touch. Add 750 gram of sugar stirring on gentle fire till the palada prathaman is reduced to 2.5 liters(colour changes to cream pink). Remove from fire. After 10 minutes add 2 spoons of butter. Cardamom powder, Cashewnut, Dried Grape Added.

Unakka Chemmeen Fry






ഉണക്ക ചെമ്മീൻ വറുത്തത്


ചീനച്ചട്ടിയിൽ വെളിച്ചെണ്ണ ഒഴിച്ച് നന്നായി ചൂടാകുമ്പോൾ ഉണക്ക ചെമ്മീൻ

 അതിൽ ഇട്ടു നല്ല പോലെ വറുക്കുക. അതിനു ശേഷം സ്റ്റൗ നിര്ത്തുക.

വറുത്ത ചെമ്മേനിലേക്ക് കുറച്ചു മുളക് പൊടിയും വേണമെങ്കിൽ കുറച്ചു

ഉപ്പും ചേർത്ത് നന്നായി ഇളക്കുക. വളരെ സ്വാദിഷ്ടമായ ഒരു വിഭവമാണ്

ഇത്. എളുപ്പവും ആണ്. ചോറിന്റെ കൂടെ കഴിക്കാൻ നല്ല സ്വാദാണ് ...

Carrot Cabbage puttu



 കാരറ്റ്  കാബേജ്  പുട്ട്


അരിപ്പൊടി (പുട്ടുപൊടി) - 1 കപ്പ്‌

നാളികേരം ചിരകിയത് - 1 കപ്പ്

ഉപ്പു - ആവശ്യത്തിന്

കാരറ്റ് - 2 എണ്ണം (ചീകിയത് / ചെറുതായി അറിഞ്ഞത് )

കാബേജ്(അരിഞ്ഞത് ) -1/ 2  കപ്പ്‌

വെള്ളം - 1 ഗ്ലാസ് (medium)

ജീരകം - 2 spoon

പഞ്ചസാര - 2 spoon

ഒരു പാത്രത്തിലേക്ക് പകുതി ഗ്ലാസ്‌ വെള്ളം എടുക്കുക ... അതിലേക്കു കുറച്ചു നാളികേരം ചിരകിയതും ആവശ്യത്തിനു ഉപ്പും ചേര്‍ത്ത് നന്നായി തിരുമ്മുക ...
അതിനു ശേഷം അരിപ്പൊടി ചേര്‍ക്കുക ... എല്ലാം കൂടി നന്നായി തിരുമ്മുക ... അതിലേക്കു കാരട്ടും കാബേജും  ജീരകവും പഞ്ചസാരയും ചേര്‍ക്കുക ... ഒന്ന് കൂടി തിരുമ്മുക ...

5 മിനിട്ടിനു ശേഷം പുട്ട് പാത്രത്തിലേക്ക് പുട്ടും നാളികേരവും ഇടകലര്‍ത്തിയിടുക ... അതിനു ശേഷം ആവിയില്‍ വേവിച്ചെടുക്കുക ...

Beetroot Juice


Ingredients :

Betroot              -     A Small Piece

Lemon Juice      -      1 Table Spoon

Water                -      1 Cup

Sugar                -       1 Table Spoon

Method :

In a blender, add a small piece of beetroot  and water . Blend it and extract juice . To this add Sugar and Lemon Juice.

Panchamritham



Ingredients :

   Milk                    -           2 Table Spoon

   Curd                   -            1 Table Spoon

   Ghee                   -            1/4 Table Spoon

   Sugar                   -            1 Table Spoon

   Honey                  -            1 Table Spoon

Method:

 Mix Every item together Panchamritham is ready . If you want you can put 1 or 2 basil leaves.

Beans Thoran Without Oil







Ingredients :

Beans (Sliced)                   -       1 Cup

Onion                                -       1 Number

Garlic                                -        6 Cloves

Curry Leaves                     -        5 Leaves

Turmeric Powder               -        1/2 Tea Spoon

Red Chili Powder              -         1/2 Tea Spoon

Salt                                   -          Add To Taste

Water                                -          1/4 Cup


Method:

1) Add Sliced Beans, Chopped Onion,Garlic,Curry Leaves and Salt to pan

2) Now add Turmeric Powder and Red Chilli Powder to this mix. Mix the chopped items with these powders. Keep it for 5 minutes.

3) Add 1/4 cup of water and cook it for 10 minutes.

Beans Thoran is ready . Serve this with Rice .

Lemon Juice




Lemon                                -          1/2 piece

Ginger                                -           1 small piece

Honey                                -           1 Table Spoon

Water                                -            1 Cup

Method :

1)   Prepare lemon juice and ginger juice.

2)  Add the lemon juice , ginger juice with 1 table spoon of honey in 1 cup of water.

3) Add this mix in a blender and blend it for 30 sec.

Tasty and healthy juice is ready !

Pal payasam


Milk                                      -           4 cups(1 litre)

Raw rice or Basmati           -            2 Table Spoon

Sugar                                   -            1/2 Cup

Ghee                                    -            1 Teaspoon

Cardamom Powder             -            Generous Pinch


Preparation :

1) Clean and Wash the rice.

2) Take a thick bottomed vessel and add milk. Cook with low flame. Don't forget to stir.

3) Then add rice and stir it well. Allow the rice to cook  with milk.

4) Then add sugar and stir it well.

5)  Add Ghee and sprinkle the cardamom powder to this payasam.

Our tasty Pal Payasam is ready...

Pavakka (Bitter Gourd) Fry


Bitter Gourd (Pavakka)      -        2 Numbers
(finely chopped)

Red Chilli Powder               -         1 Table Spoon

Turmeric Powder               -         1/2 Table Spoon

Salt                                      -          Add To Taste

Oil                                       -           4 Table Spoon


Preparation:

1) Add Bitter Gourd to a pan. Now add Red chilli powder, Turmeric powder and salt to this pan. Mix chopped Bitter Gourd with these powders. Keep it for 10 mins.

2) Heat Oil in a pan add this mix, fry till the bitter gourd turns brown.

3) Tasty pavakka (Bitter Gourd) fry is ready. You can serve it with chapati or rice

Pavaka (Bitter Gourd) Curry Without Oil





Pavaka (Bitter Gourd)                                    -      2 Numbers

Carrot                                                             -      1 Number

Kodumpuli

Onions                                                           -      2 Numbers

Garlic                                                             -       6 Cloves

Ginger                                                           -      Small Piece

Curry Leaves                                                -       10 Numbers

Green Chili                                                   -       3 Numbers

Red Chili Powder                                         -       1 Table Spoon

Turmeric Powder                                         -        1/2 Table Spoon

Coriander Powder                                        -        1 Table Spoon

Salt                                                               -        Add to Taste

Jaggery (Sarkara)                                         -       A small piece to taste

Water                                                           -        2 Cup
       
Preparation :

1) Chop  Bitter Gourd to small Pieces.

2) Chop Carrots, Onions, Garlic, Ginger, Green Chili to fine pieces...

3) Add chopped Bitter Gourd, Carrots,Onion, Garlic, Ginger, Green Chili and Curry Leaves to a pan.

4) Now add Red Chili powder, Coriander powder, Turmeric powder and salt to this mix. Mix the chopped vegetables with these powder. Keep it for 5 minutes . please note : we have not started to cook yet!

5) Add 2 cups of water and kodumpuli (Malabar tamarind) and cook it for 10 minutes.

6) Add jaggery and cook it till it get dosolved.. Stir well.


Bitter Gourd curry is ready.  Serve this curry with rice or chapati.

Preparation :

1) Chop  Bitter Gourd to small Pieces

2) Chop Onions, Garlic, Ginger, Green Chili to fine pieces...

3) Heat oil in a pan and add  chopped Onion, Garlic, Ginger, Green Chili and Curry Leaves, fry till the onion turns brown.

4) Now add chopped bitter gourd  and salt to taste to the mix. Stir well . Cook it for 5 minutes.

5) Add red Chili powder and Turmeric powder. Cook it for more 2 minutes.

6) Add water and Kodumpuli (malabar tamrind) and cook for 5 minutes.

7) Add Coconut milk and stir well . Let it simmer for 3 minutes...

Bitter Gourd curry is ready. this vegetable is very nutritious. Children generally dislike this as its very bitter. However this way off cooking really makes the bitter taste mild and adds good flavour to it..

Serve this curry with rice or chapati.

Chicken Sausage Recipe - Kerala Style

Sausage                         -   6 Numbers

Onions                          -   2 Numbers

Garlic                           -   6 Cloves

Ginger                          -   1 Small Piece

Green Chili                  -   3 Numbers

Curry Leaves               -   10 Numbers 

Tomato                        -    2 Numbers

Salt                              -    Add To Taste

Turmeric Powder        -   1/2 Table Spoon

Red Chili Powder       -   1/2 Table Spoon

Coriander powder      -    1 Table Spoon

Garam Masala
powder                      -     1/2 Table Spoon

Coconut Oil              -     4 Table Spoon

Water                       -      1/2 Cup

Preparation :

1) Finely chop Onion, Garlic, Ginger ,Green Chili and Tomato.

2) Cut Sausage to small pieces.

3) Heat Oil in a pan and add Onion, Garlic, Ginger, Curry Leaves and  Green Chili. Fry till Onions turn brown color.Now add Turmeric powder, Red Chili Powder, Coriander and Garam Masala Powder. Mix well for 2 minutes. Then add Tomato to the mix. Stir well.. Cook it for another 3 minutes.

4) Add Sausage  and water to this mix . Cook it for 8 minutes. Stir well from time to time.

Chicken Sausage is ready. Serve it with Chapati, Rice or Bread. It really tastes awesome !

Onion Chammanthi



Onion                        -   2 Numbers

Tamrind                    -   Seedless (Adjust to your taste)

Curry Leaves            -  5 Leaves

Salt                           -  Add to taste

Red Chili powder     -  1 Table  Spoon

Coconut Oil             -   1/2 Table Spoon

Preparation :

1) Grind Onion, Tamrind, Curry leaves, Red chilli powder and Salt to paste.

2) Add oil to this paste and mix well.

Tasty , Spicy and sour Chammanthi ready ! We can serve it along with Idly, Dosa and Rice.

Cabbage Thoran Without Oil

Cabbage                  -     1 Kg

Onion                      -     2 numbers (Medium size)

Garlic                      -     8 cloves

Ginger                     -     1 small piece

Green Chilies          -     5 numbers (medium spicy/hot)

Curry Leaves          -     15 leaves

Salt                         -     To taste

Turmeric powder   -      1/2 Table Spoon

Red Chili Powder  -      1/4th Table Spoon

Water                     -      1/4th Cup


Preparation :

1) Finely chop onions, garlic, ginger and green chilies .... Chop the Cabbage to small size.

2) In a vessel, mix the chopped items together. Add curry leaves.Now add salt to taste. Add  turmeric powder and red chili powder. Mix it well with the choped items.. keep it aside for 10 minutes.

3) Now add 1/4th cup of water and stir it ... Cook this in a pot with its lid on top for 15 minutes on medium flame. Stir the items every 5 minutes. Make sure that the cabbage is cooked well .
 
4)  Cabbage Thoran is ready. Serve hot with Rice...

You can increase or decrease the use of spices according to your taste.

This is a very tasty preparation, which contains no oil... This is good for people who have high Cholesterol.

Rava Coconut Dosa (Rava Coconut Pancake)


Rava                                     -      4 Cup
 

Grated Coconut                    -      1 Cup
 

Sugar                                      -      4 Tablespoon
 

Preparation : 

1) Soak  Rava for 5 mins. 

2) Grind Rava and grated coconut to a smooth paste with water, add sugar to the mix. 
 
3) Heat a pan and grease it lightly with oil or ghee. When hot, pour a ladelful of the batter, spread using a circular motion to make a thin dosa and cook on one side. Flip the dosa and cook it on other side as well.
 
Our Dosa is ready.

Rava Urid dosa (Rava - Urid Dal Pan Cake)

Rava                                     -      4 Cup
 
Urid Dal                              -      2 Cup
 
Salt                                      -      To Taste
 
Preparation :
 
1) Soak Urid Dal in water for 1 hour and soak Rava for 5 mins.
 
2) Grind Urid Dal and Rava to a smooth paste with water, add salt to taste.

3) Heat a pan and grease it lightly with oil or ghee. When hot, pour a ladelful of the batter, spread using a circular motion to make a thin dosa and cook on one side. Flip the dosa and cook it on other side as well.

 4) Our Dosa is ready. We can serve it with chutney .

Nenthra Pazham payasam (Kerala - Banana Pudding)

Kerala Big Banana (Nenthra Pazham)        -     2 Numbers

Jaggery                                                        -     400 Grams

Coconut Milk (Thin)                                   -     1 Cup 

Coconut Milk (Thick)                                 -     1 Cup 

Ghee                                                            -     4 Table Spoon

Cardamom Powder                                      -     1 Table Spoon

Cashew Nut                                                 -      10 Numbers
 
Raisins                                                         -       15 Numbers
 
Coconut Pieces                                            -      1 Table Spoon
 
Dry Ginger Powder                                     -      1/2 Table Spoon
 
Water                                                           -      1 Cup
 
Salt                                                               -      1 Pinch
 
 
Method :      
 
1) Steam the 2 Bananas. Peal the Bananas, with a knife , split the banana to half vertically. Now remove the Black Seeds from it (We get black seed like substance in Kerala Big bananas)  
 
2) Mash the banana in a grinder, till we get a nice paste.
 
3) Take a pan, melt jaggery with 1 cup of water and remove impurities by straining it.    
 
4) Take a thick bottom vessel add mashed banana paste and 2 tsp of ghee and cook till it turns brown thick paste. Note : Please stir while it cooks..
 
5) Add melted jaggery into this mixture and cook on a medium flame and stir continuously. When this mixture is thick add thin coconut milk and stir and cook for 5 minutes.     
 
6) When this mixture is thick add thick coconut milk and mix it well. Remove from fire. Do not allow it to boil.
 
7) Add 1 pinch salt and stir the mixture .
 
8) Sprinkle cardamom powder and dry ginger powder on top of the pudding...
 
9) Heat 2 table spoon  of ghee add coconut pieces, cashew nut, and raisins and fry for 2 minutes. Pour this into the payasam. Delicious Banana payasam is ready to serve !

Ammiyar Dosa - (Rice- Lentils Pancake)




Raw Rice                        -                      1 Cup

Boiled Rice                    -                       1 Cup

Urad Dal                        -                       1 Cup           

Chana Dal                     -                        1/2 Cup    

Moong Bean                 -                        1/2 Cup

Fenugreek Seeds          -                        1 Table Spoon

Red Chilli                    -                          6 Numbers

Asafoetida (Hing)        -                           1/4th Table Spoon

Coriander Seeds           -                         1 Table Spoon

Salt                              -                         Add to Taste


Method :-

1) Add all these items given above (except salt), and soak in water for 8 hours. Its better to keep in soaked  overnight.

2) Grind to a smooth paste with  water, add salt to taste.



3) Heat a pan and grease it lightly with oil or ghee.When hot, pour a ladelful of the batter, spread using a circular motion to make a thin dosa and cook on one side. Flip the dosa and cook it on other side as well .

4)  Our Dosa is ready. We can serve it with chutney or sambar.

Cauliflower Masala - Without Oil Preparation

Cauliflower              -    1 Kg

Onion                       -     3 numbers (Medium size)         

Garlic                       -     12 cloves

Ginger                      -     1 small piece

Tomato                    -     2 numbers  (medium Size)

Green Chilies          -     3 numbers (medium spicy/hot)

Curry Leaves           -    15 leaves

Coriander Leaves    -     Finely chopped for garnish

Salt                          -     To taste 

Turmeric powder    -      1/2  Table Spoon

Red Chili Powder   -     1/4th Table Spoon

Garam Masala        -      1 Table Spoon

Coriander Powder  -      1 Table Spoon

Water                     -       1 Cup


Preparation :

1) Finely chop onions, tomato, garlic, ginger and green chilies ....  Chop the Cauliflowers to medium size.

2) In a vessel, mix the chopped items together. Add curry leaves.Now add salt to taste. Add  garam masala, turmeric powder, red chili powder and coriander powder. Mix it well with the choped items.. keep it aside for 10 minutes.

3) Now add 1 cup of water and stir it ... Cook this  in a pot with its lid on top for 15 minutes on medium flame. Stir the items every 5 minutes.

4) Once cooked, add chopped coriander leaves to garnish it... Serve hot with Roties or Basmati Rice...

You can increase or decrease the use of spices according to your taste.

This is a very tasty preparation, which contains no oil... This is good for people who have high Cholesterol.

Arrowroot Flour / Kuva Podi Payasam (pudding)

Arrowroot Flour                 -       3 Table Spoons

Water                                  -       2 1/2 Cups

Jaggery                               -       3 Pieces

Ghee                                   -       2 Table Spoons

Cardamom                          -      3 Numbers  (Grind it to make fine powder)

Cashew Nut                        -      6 Numbers  

Raisin (Dried Grapes)        -      8 Numbers


Preparation :

1)In a  pan, add 1/2 cup of water and put 3 pieces of jaggery and melt it on medium flame.. Stir it so that the jaggery melts and mixes well with the water to form a thick syrup.

2) In a vessel , add 2 cups of water and add 3 table spoons of Arrowroot Flour, Mix well. Cook it for three minutes on medium flame, make sure that you stir it well while it gets cooked.

3) Filter the Jaggery syrup and pour it into the Arrowroot mix, and stir it well. Please note : No need to cook on flame...  Just mix it..

4) Add 1 table spoon of heated Ghee on top of this mix. Flavour this mix with Cardamom powder. The paysam is ready.. Now lets garnish it...

5) Add 1 table spoon of ghee to pan.. Heat it on medium flame, now roast the cashew Nuts and Raisin in it. Now garnish the Paysam (mix) with Roasted Cashew Nuts and Raisins...

The Arrow Root payasam is a healthy and tasty pudding. Arrow Root powder is very good for the stomach, and helps in digestion.
